Stuffed Skirt Steak, Mushroom & Onion Reduction Sauce

I crave meat. Good, seasoned meat! I initially went to the Whole Foods looking for some flank steak so I could take out my frustrations with my tenderizer and flatten it out like a pancake. But alas, the lovely gentleman behind the counter only had skirt. Time to get innovative. I ended up stuffing skirt steak with a mix of onions and mushrooms over a bed of baby spinach on each side.

Reduction sauce?? Yeah, so basically my sauce reduced to nearly nothing because I wasn't watching.. So hence the fancy name reduction! Ha.

Seared them in the pan of which they began to promptly fall apart! So me? What do I do? I stick my hand in the pan and hold them down, burning my fingers. My "help!" call from the kitchen brings hubby and son asking what's going on.

I'm fine. No pain no gain.

After searing my fingers and the rolls, I popped them into the oven for about 10 minutes. Boiled some orzo pasta and added diced cucumber, cilantro, grape tomatoes and red onion. Splash of lemon. Boom! Dinner finished, everyone eating happily...... at 9:00p.m.

I gotta work on my execution.
